AB Since the first occurence of BSE in Germany and media reports on incorrect labelling of sausages, there was an increasing interest in species identification. After the first objections by food-control authorities concerning beef protein-detection in sausages, meat industry critisised the methods applied and described possible ways for the input of beef protein into meat products. The goal of this article is to discuss these possibilities on the basis of own analytical results.
