TI Turkey Downgrading: Effect of Truck Cage Location and Unloading

Three factors related to the transportation of turkeys from the grow-out farm to the processing plant were investigated in relation to the downgrading of carcasses. The use of a new, cage-type truck with a single unit wire door significantly reduced (p<0.5) downgrading due to half-wing trims, bruised drums, and breast scratches as compared to using an old, multiple unit, board-door, cage-type truck. Cage location on the truck (top, middle or bottom) had a significant effect on back scratches. In the plant, unloading turkeys on the side closest to the stunner (shorter hanging period) resulted in less wing trims, drum and thigh trims and back scratches compared with unloading from the far side
