AB The influence of slaughtering method was evaluated by analysing the following parameters: glycolytic potential (GP), rigor mortis and epaxial muscle texture. The results obtained from direct observation, together with those from instrumental measurements, led to the definition of some reference values for the identification of the various rigor mortis stages.
