AB Ever since the transition from conventional to industrial processing, stunning has been an fundamental stage in poultry processing, regardless of any regulations. From the electric knife, the electrode stunner and the waterbath stunner developments have progressed to the present generation of frequency-controlled waterbath stunners. The simple process from the 50s has evolved into highly complex modern poultry processing, in which the stunning operation interacts with numerous other technological processes. A great deal of research into this processing stage has been carried out over the past two decades. Weemingly with very little effect. As a result of our wider knowledge we are, however, now in a position to draw up a balanced list of requirements, whichmust be met in the ideal process, currently referred to as stunning. The industry is on the eve of producing such a list of requirements. The policies of the various government authorities could, however, frustrate developments in this vital area by the one-sided enforcement of regulations. On the other hand they could also stimulate developments by clearly defining their legal objectives and categorizing them in objective parameters, drawing up a list of gaps in our knowledge and stimulating research into these areas.
