AB Stunning of animals is in the first place applied to induce a state of unconsciousness and insensibility ofr sufficient duration to ensure that the animal does not recover while bleeding to death. Secondly, stunning should produce sufficient immobility to facilitate the initiation of exsanguination. It is assumed that an animal is unconscoius during a general epileptiform insult caused by passage of an electric current. for the occurrence of such an insult, a minimum amperage is necessary, which depends on the electrical resistance of the body. Animals should be restrained before the electrodes can be positioned. Poult5ry is shackled and gibven time to settle down and stop wing flapping before they are stunned in a waterbath. In this phase the animal is in an unnatural position with consequences for the animal's welfare and meat quality. Heart failure induced by electrical stunning is generally recommended from the welfare point of view. Although, heart failure during stunning may lengthen the bleeding time, exsanguination may be adequate. Haemorrhages during electrical stunning are caused by rupturing of blood vessels which may result from super contractions and/or by movements between muscled during violent contractions. Higher voltages may increase haemorrhages in this respect. Heart failure during electrical stunning may reduce the incidence and seriousness of the haemorrhages. The methods of shackling and stunning of poultry in a water bath may interfere with the animal's welfare. The method of stunning, the recommende minimum current and the frequency applied result in unacceptable meat quality defects. Therefore, ist is necessary to develop and introduce improved stunning methods.
