AB A procedure was developed for determining blood retained in chicken parts. A 4-pi low-level gamma counting facility, designed to detect natural gamma emissions, served as the monitoring device for I131 in the blood. The percentages of gamma rays absorbed by various amounts of ground chicken ranged between 10 and 24 per cent for samples weighing from 1 to 400 g. The effect of various slaughtering techniques on distribution of retained blood within the cut-up parts was determined. Birds slaughtered by the stun or standard cut method lost more blood with the offal and during bleeding than birds slaughtered by the other methods. There was no difference in the amount of blood within eacvh type of retail cut, breast, thighs, drumsticks or wings, as a result of slaughter method. Blood volume per unit weight of each cut-up piece was also presented.
