AB It is concluded that the features which contribute to a high prevalence of blood spots in breast meat are not fully understood. However, wehen the prevalence of blood spots in breast fillets is high, there can be some benefit from using a ventral instead of a dorsal neck cut for killing the birds. In some situations this could provide a commercial incentive for changing from a dorsal neck cut to the potentially more humane ventral neck cutting method.
