AB The death reaction brings about marked changes in the turnover rate of adenosine triphosphate (ATP) in the muscle fibre. Brief electrical stimulation of muscle,either directly or via the motor nerve, depletes the creatine phosphate (CP) content of the tissue and produces an acceleration in the rate of ATP breakdown and of lactate formation which continues after cessation of the stimulus. Anoxia, even in the absence of muscle contraction, accelerates glycolysis in stress-susceptible pigs. It is necessary to maintain the intracellular environment as close as possible to its in vivo state at death in order to reduce the rate of glycolysis post mortem. The methods of stunning and slaughter presently used do not meet this requirement.
