AB Stunning is recognised world-wide as a key issue of welfare in slaughtering of meat producing animals. Quantifying the humaneness of the stunning technique in terms of inducing insensibility to subsequent slaughter, although often intuitively obvious, is difficult objectively. The use of techniques such as the electroencephalogram, evoked potentials and the measurement of neurohumoral/neurotransmitters can help form a 'suite' of measures to assess stunning. Using a 'suite' of measures rather than a single parameter analysis can increase confidence in the assessment method. Measured neurotransmitter changes can be mimicked pharmalogically and this can also help set quantitative limits for stunning.
