AB One consequence of using higher stunning currents may be an increase in the number of birds exhibiting capillary bleeding in the deep breast muscles. In our work currents above 100 mA raised the incidence from 5% to 14-17%. Birds receiving 0-80 mA, 81-140 mA or 141-220 mA have 0.24, 0, 50 and 0.74 fractures/bird respectively. As a note of caution however, one group of broilers stunned with greater than 220 mA have so far been found to have only 0.40 breaks/bird. With regard to poultry welfare, cardiac arrest stunning has now been advocated as the most humane technique. However, if the consequence of adopting this method is that down-grading proves to be a serious economic factor militating against its use, then alternative practices both at stunning and during further processing will need to be developed.
