AB The problems encountered in processing turkeys and large chickens are examined. These extend from catching the live bird on the rearing farm to the point of final packaging. The majority of problems arise from the wide variability in carcass size and weight. A lack of up-to-date research into many fundamental processing operations as applied to large carcasses is apparent. The impact of recent UK and EEC legislation on the processing of large carcasses is highlighted.
