AB This paper describes a number of experiments carried out on Danish bacon factories with the aim of comparing various types of stunning with respect to blood splashing, fractures and meat quality. Meat quality was measured using pH2 and optical probe measurements. The results which are summarised below showed quite clearly that CO2-stunning in the compact equipment was much better than either of the two types of electrical stunning used: The investigation consists also of a description of the three stunning methods used in the experiment including a subjective evaluation of the stress to which both the pig and the operator are exposed under normal working conditions. Finally, the three methods are compared economically
