AB At present an electrical method that originated from medical science is practised to stun slaughter animals. It is usually assumed that an animal is unconscious during a general epileptiform insult induced by an electrical current with a minimum amperage. The slaughter animals are electrically stunned in a pen, in a cage or in a V-type restrainer. The electrodes are positioned on the head or head and body of the animal. At the moment several automatic electrical stunning methods are available. Heart failure induced by electrical stunning is generally recommended for the animals' welfare. However, it is questionable if the degree of exsanguination is adequate. Electrical stunning may decrease the pH in the muscles more rapidly and to a lower ultimate value. It has been observed that blood splash is caused by rupturing of blood vessels during and after electrical stunning. Introduction of low-stress restrainers may improve the animals' welfare as well as the meat quality. Further research with manipulation of the electrical stunning current may result in a more constant meat quality.
