TI Electrical stimulation efficiency and distribution of electric potential and electric field along lamb carcasses
QU 30. Europ. Fleischforscherkongress, Bristol 1984

AB Twenty minutes post mortem, after dressing, stimulation voltages were applied: - either by one couple of electrodes at each end of the lamb carcass (shoulder and leg). The electrical potential was measured at several localized points on the electric field line joining the electrodes, - or at the severed neck muscles and the Achille's tendon, and the electric field was measured at the localized level of several muscles. The results show: 1) a sudden drop in the electric potential in the vicinity of the electrode ; because of the polarization and the contact electrode-muscle tissue, only fifty per cent of the applied voltage is actually efficient ; 2) a very heterogeneous distribution of the electric field in the carcass ; 3) high values of electric field were measured in the m. Longissimus Dorsi and very low values -three to four times lower- in the shoulder muscles, m. Supraspinatus and m. Triceps Brachii.
