TI Assessment of stunning effectiveness according to the present scientific knowledge on electrical stunning of poultry in a waterbath

AB Electrical stunning in a waterbath is still the most common method of pre-slaughter stunning of poultry. As electrically stunned animals showing no movements can be only immobilized via depolarisation of the muscles, regarding only the clinical assessment of the birds does not give enough informations on the stunning effectiveness and the use of laboratory methods in order to evaluate stunning effectiveness is not possible under practical conditions. Therefore it has to be checked whether the electrotechnical conditions for an effective stun are met according to the existing scientific results. Only if scientific evidence about the effectiveness of the used currents on the loss of consciousness exists, it is possible to assess stunning effectiveness correctly. To evaluate stunning effectiveness in addition the clinical assessment of the birds including muscle tone and reflex tests as well as the behaviour of apparantly awake birds should be performed according to the used currents, proper function of the stunner and the accuracy of the debleeding process. The compilation of the legislational requirements in the EU, Norway and the United States shows, that only a few countries prescribe detailed specifications for proper stunning of poultry.
