TI Heart fibrillation induced by electrical stunning of poultry - its impact on carcass quality, legal aspects and voltage requirements
QU Proceedings of the Seminar "Pre-Slaughter Stunning of Food Animals", European Conference Group on the Protection of Farm Animals, 2nd - 3rd June 1987, Brussels, Belgium;
PT Proceedings article
AB Stunning inducing heart fibrillation has been recognised as the most humane electrical method. Experiments and practical investigations showed that heart fibrillation is triggered in a considerable percentage of presently slaughtered chicken and will not affect meat quality or marketing of the product. Objections against this method which are based on legal considerations are shown to be unfounded. Voltages required to kill at least 90% of the birds during a six-second passage of a water bath stunner are presented and discussed for layers, ducks, geese, turkeys and guinea fowl.
