TI Effect of salinity in a water bath stunner on the amperage obtained during electrical stunning of poultry
QU Fleischwirtschaft 1991 71(11): 1309-1310
PT journal article
AB To investigate the influence of salinity in the water bath on the currents obtained during electrical stunning of poultry experiments were carried out using a standard resistor and tap water (conductivity 0.56 mS/cm) as well as 1%, 5%, 10% and saturated NaCl solutions. The results were verified by repeatedly processing 3 freshly killed geese in tap water, 1% and 5% NaCl solutions. Up to a distance of 20 cm between the water bath electrode and the dummy load or real bird, the overall increase in current strength with increasing salinity was low and stayed within the range for normal variation. Provided the live electrode covers the entire length of the tub there seems to be little benefit in the additional use of salt to improve stunning currents.
